日本代购-Pommard / Domaine Rossignol Fevrier わずか0.25haの栽培面積から造られる、希少なポマール。ポマールの北部にある2つの区画の葡萄を使用。トータル面積は0.25ha。自然酵母を使用。ステンレスタンクで18日間の発酵。その後、アリエ産のオークで熟成。ノンィルターで瓶詰め。繊麗なポマール。 タイプ：赤ワイン 産地：フランス / ブルゴーニュ 主要ブドウ品種：ピノ・ノワール 熟したチェリー・苺・カカオを想わせ、熟成感も。繊細なタンニンとチャーミングな酸がバランスを取っています。 タイプ：赤ワイン セパージュ：ピノ・ノワール100% ヴィンテージ：2022 容量：750ml 熟成方法：自然酵母を使用し、ステンレスタンクで18日間の発酵。わずか0.25haの栽培面積から造られる、希少なポマール。ポマールの北部にある2つの区画の葡萄を使用。トータル面積は0.25ha。自然酵母を使用。ステンレスタンクで18日間の発酵。その後、アリエ産のオークで熟成。ノンィルターで瓶詰め。繊麗なポマール。 熟したチェリー・苺・カカオを想わせ、熟成感も。繊細なタンニンとチャーミングな酸がバランスを取っています。 生産者の概要 1510年より代々続く家族経営のドメーヌ。1923年に初めて自家詰め。2008年よりビオディナミ栽培を始めたコートドールでもビオディナミワイン生産者の先駆け的な生産者です。現在の当主はフレデリック・ロシニョル氏ですが、最近ではその息子ヴァランタン氏が若手らしく積極的にドメーヌ業に参入し、新しい風を取り入れています。具体的にば熟成樽について。通常ではオーク樽、近年ではアンフォラで熟成している生産者がいますが、ヴァランタン氏の提案で、試験的にブルゴーニュでは現在数生産者だけが導入している「ワイングローブ」というガラス状の大きな球体の容器で熟成を始めています。この容器のメリットとしてはオーク樽、アンフォラ以上に「ワインがフレッシュに保たれる」という点です。ヴァランタン氏曰く「ワイングローブで熟成すると酸化防止剤を入れる必要が無いんです」との事。2021年ヴィンテージのワインからこれを取り入れてみるという事です（最初は少量なので販売するかどうかは検討中）。また2021年にボージョレのエリアの畑を新たに購入。酸化防止剤無しのワインをこのエリアでチャレンジしてみたいと意欲を見せています。このお話を隣で聞いていた父フレデリック氏。何も言わないものの、とてもにこやかな表情で聞いている姿が印象的。この父子の信頼関係の素晴らしさが伺えました。 ポイント また、醸造面でもう一つ新たな取り組みがあります。こちらは父フレデリック氏の「長年にわたる感覚からという試み」です。近年の地球温暖化により、ワインにフレッシュ感が感じられない年がある。近年で言えば2020年がそう。なので、2020年を皮切りに、全ての赤ワインに対して全房発酵を行うようにしました。これによりフレッシュ感が保たれ、ワインがすぐに熟してしまうのを防ぐことに成功しています。またピジャージュも行わないようにしました。これによりワインに柔らかさと複雑さを醸し出すことに成功したとおっしゃっています。ドメーヌ・ロシニョル・フェヴリエ。本拠はヴォルネ村。2000年代までは同じ村のマルキ・ダンジェルヴィ―ユと共にセラーを共有したりビオディナミ申請を行ったり、ヴォルネ村のワインの向上に切磋琢磨してきました。そういったノウハウをもとに更なる向上を進めています。ヴォルネ、ムルソー、ポマール、ボーヌにある合計8.5haを所有しています。
