日本代购-Information 品名 サンセール サウレタス セバスチャン リフォー ワイン名（原語） Sancerre Blanc Sauletas Sebastien Riffault タイプ 白ワイン・辛口 内容量 750ml 産地 フランス・ロワール 品種 ソーヴィニヨン・ブラン 商品説明 亜硫酸無添加、貴腐葡萄が高い割合で混じるワイン リトアニア語で「太陽の下」という意味でキンメリジャンで育つ樹齢50年の貴腐菌が付 いたブドウ5割と熟したブドウ5割をプレス、ステンレスタンクで3ヶ月発酵後、古樽で3 6ヶ月熟成しました。わずかに濁る色調の濃い黄金色の外観から、金木犀や金柑の香り、少し高めの酸味やほろ苦さと複雑味、アプリコットジャムの熟感がアフターで感じられます。 備考 気温の高い時期はクール便での配送をお勧めいたします。　セバスチャン・リフォー　Sebastien Riffault サンセールで自然栽培醸造テロワール毎のスペシャルキュヴェ達 代々サンセールで営むブドウ作り 1981年12月5日、サンセール生まれ。家族は代々サンセールで農業を営んでおりました。 そんな自然の環境で生まれ育ったのがセバスチャンです。 お爺様の時代は山羊のチーズや小麦、勿論葡萄栽培と手広く色んな農業を行っておりました。 そしてお父様エチエンヌの代になり、葡萄栽培からワイン醸造を手掛けるようになりました。 お父様は無農薬ではありませんでしたが、その当時まだそれ程ポピュラーでなかったDomaineという自社畑・自社醸造・自社瓶詰めをサンセールで根付かせた人物です。 そのお父様に育てられました。 そのセバスチャンは7 〜 8歳頃から畑の仕事を手伝い、「絶対にワインを造る！」と決めていたそうです。 自然界に育ったセバスチャンは当然ワイン造りを目指します。最初にアンボワーズの農業高校でワインを学び、その後ブルゴーニュ・マコンの大学で醸造学を学びます。 そこでクラッシックな醸造を徹底して学びました。 ナチュラルワインへの覚醒 卒業後直に実家に戻らず、ロンドンに向かいました。ワイン市場の勉強をする為です。パリではなく、世界のワインマーケットを本格的に学ぶ為です。 セバスチャンはロンドンのワインショップで勤務した時にナチュラルワインを覚え、その後畑に戻らずパリの「ラ・ヴィーニャ」というワインショップで働きます。 ナチュラルワインに目覚め、そのワインの販売では世界一とも言われるお店で勉強したいからです。そこで最先端のワインを勉強しました。 Roch、Pacalet・・・等々、頭から今までのワイン観をひっくり返されたのです。 ロンドンの確立された伝統的なワイン、そしてパリの最先端の情報を先取りしたワインを実際消費者であるお客様とたずさわり、そして2004年にサンセールに戻り本格的に自分のワインを造り始めました。 2003年に0.5haをBIOで試し「これなら大丈夫！」と2004年から自分のワインを造ります。 2004年が最初の彼のヴィンテージです。彼の拘りは最初っからSO2は一切入れない「O・二酸化硫黄」のSans Souflesです。 これで自信を付けた彼は2005年に新しく1haをBIOに2006年にまた2haをBIOに、徐々に徐々に畑を無農薬に切り替え、2007年には100％完全無農薬の畑にしました。 2007年からカリテ・フランスのBIO認証を取得しました。 彼の持ち畑は12ha、内訳は11haのソーヴィ二ヨンブラン種、1haのピノノワールです。 彼の畑の守り方は凄い拘りがあります。無農薬をベースにスパルタ教育でありながら最終的には葡萄に限りなく優しい農法を選んでおります。 基本は放っておくのです。甘やかせていてはいけません。 それが肥料であり、土の興し方でもあるのですが、必要な時に手を差し伸べます。 35もの違う個性の畑を管理するのですから、その子達のリズムを読み取らないといけません。ソーヴィニヨンブランは11haですが、その中の4haが上のクラスの畑、その4haは一切トラクターを使用しないで100％馬で手入れをするのです。 その仕事量は半端ではありません。 ゆっくりと発酵し、その後1年ゆっくりと熟成させます。マロラティックを急がないのです。 無理に温度を上げたり、MLFを促進させる事は一切行いません。全ては葡萄の神様に委ねた醸造方法、ひたすら待つのみです。 サンセールはロワールの中でも収穫は遅い生産地です。 その遅い生産地の中でもセバスチャンはさらに熟度を上げる為、他の人たちよりも2週間位収穫を伸ばします。 その徹底ぶりは半端ではありません。彼は天然の天才醸造家、嫌みのない素朴な純粋なヴィニュロンです。 （インポーター資料より）
