日本代购-newitem202503_01マス・クトゥルでは、数十ヘクタールもの様々なテロワールを有する畑を所有しています。 拠点となるPuimisson（ピュイミソン）は、表土と下層土が寄せ集まった地形をしています。その大部分は粘土石灰で形成されておりますが、粘土質が強かったり石灰の割合が多かったりしており、所々に砂利や泥灰土が含まれていたりもしています。 それが注目されるよりもはるか前の1987年から、有機栽培に取り組んでいます。マス・クトゥルの畑の全てにおいて、30年近くにわたり、化学肥料や除草剤、殺虫剤など合成化学薬品の類いは、一切使われていないことを保証いたします。その管理は厳格に行われており、植物や土壌に細心の注意を払っています。 例えば粘土質の土壌に必要な耕起には制限を設け、土壌が固く締まってしまわないようにしています。春には、すべてのブドウの台樹を手作業で掘り起こしますし、剪定も芽が出てから行います。基本的に、樹の手入れについては人的介入を制限しており、必要な場合は植物由来の堆肥や調合剤、その他天然由来のものを用います。有機栽培には、（その効果を発揮させるために）安定した環境で行うことが求められます。 10年以上前から畑の環境改善に取り組み始め、それまでの畑を取り巻く環境の影響により状態の悪くなった樹を抜き、代わりにオリーブの木を植えました。 また、畑を守るため周囲に生け垣を造りブッシュを発生させ、木々を植えて緩衝地帯を作り、水の浸食や水質汚染を防ぐことができるようにしています。また、生物学的多様性を守り、植物や動物が共生できるようにしています。従って一帯をモザイク状にし、近隣の生産者が栽培する畑からの影響を受けないように努めています。 これまでに千本以上の木々を植え、オリーブの植樹も行ってきましたが、今後もこの活動を続けていくつもりです。そして、年間を通じて葡萄の樹に愛情を惜しまず注ぎ、最良のブドウが収穫できるように心がけています。これら全ては、収穫時にそれが最高の状態にあることを、ブドウの方から語りかけてくれるようにするためなのです。 醸造において唯一のレシピは存在しないと考えており、品種やヴィンテージに合わせて調整する（ショート/ロングマセレーション、除梗または全房発酵、ピジャージュあるいはルモンタージュ）直感的な方法、つまり収穫したブドウに応じて様々な手法を使い分けています。それによって、どのようなワインに仕上がるかが決まってくるのです。 「ナチュラル」なワインを造ることは、ブドウ畑での作業における最終回答を得ることでもあると思っています。それを選択することは外部からの要素を断つことを意味しており、自分たちが手塩にかけた葡萄たちが、ありのまま応えてくれるように導くわけです。そのために亜硫酸を添加せず、培養酵母を用いず、酵素も加えない。経過を観察しつつも手を加えず、試飲を重ねながら成長を見守ります。 瓶詰めは蔵で、フィルターを用いず月の暦に則って行います。ワインには、最初から最後まで酸化防止剤を添加していません。 ブドウ品種はそれぞれ異なる区画で栽培しており、品種ごとにワインを醸造します。マス・クートゥルでは、様々なキュヴェが毎年生み出されますが、ワインに付けた名前は畑由来ではなく、そのスタイルや個性によるものです。同じ両親のもとに生まれ同じ環境で育った兄弟や姉妹であっても、それぞれ皆が異なる性格に育つものです。それは我々のワインも同じで、（畑名ではなくワインの個性で名前を付けるので）キュヴェによっては毎年できますし、数年に一度くらいの割合でできるもの、そして滅多にできないものもあります。Vin des Amis, Vigne Haute, Classe, Flambadou, Flower Power・・・これらのワインとの出会いが、皆さまにとって最高の瞬間となりますように。 除梗して5日間マセラシオン。ステンレスタンクで発酵を開始させて、終了直前に卵型のコンクリートタンクに移して7ヶ月間の熟成。 オレンジがかった黄金色。ヌメロ・アンに比べると華やかな香りはやや控えめな印象で、アプリコットや黄プラム、硬質な黄桃、黄色やオレンジ色の柑橘に、オードヴィーのような充実感やビターカラメルの深みを感じる風味が加わります。口に含むとみずみずしささえ感じる清らかな飲み心地で、張りのある酸がスッキリとした口あたりを生み出し、全体に輪郭を与えながら、甘酸っぱい果実味を支えて伸びやかに広がります。次第に花々の華やかさや果実の芳醇な風味が膨らみ、黄桃の核のような微細なタンニンがメリハリを与え、骨格が感じられます。 (インポーター資料参照) 生産者：マス・クトゥル 生産地：フランス/ラングドック 品種：マカブー タイプ：白 容量：750ml
