日本代购-【内容(量)】ミナミマグロ(インドマグロ)中トロ　500g前後 【原材料(産地)】ミナミマグロ（国産） 【賞味期限】冷凍保存で2ヶ月 【注意点】家庭用の冷凍庫保管の場合、2-3週間以内に食べて頂いたほうがよいです。時間がたつとマグロの色が茶色くなることがありますが、味には問題ありません。 【備考】一人前を100gとすると(刺し身にして6-7枚)約5人前になります。「マグロの解凍方法・切り方」説明書（築地魚群ガイドブック）が付いてます。天然のミナミマグロの中トロ500gです。スーパーでは絶対売ってないミナミマグロは味が濃く、脂はスッと口の中で溶ける爽やかなマグロです。中トロの中でも特に旨い部分です。味けのない赤いだけのバチマグロや脂がくどい養殖本マグロに飽きた方は、ぜひミナミマグロを食べてみてください。豊洲市場ではミナミマグロのことをインドマグロと呼ぶことが多いです。本マグロよりもミナミマグロの方が歴史が古く、昔気質のお寿司屋さんですとミナミマグロしか使わないというお店もあるくらいです。養殖のミナミマグロもありますが、このミナミマグロは天然ものです。天然マグロは脂がくどくないのが特徴で、中トロの身に含まれる脂は口の中でスッと溶け嫌味がありません。中トロの中でも特に旨い「腹の血合い下」部分です。1尾からそんなに量はとれません。他のマグロ通販ですと、血合い下中トロは1サク200g位で7、8000円しますので相当お得です。豊洲の業者卸直販が美味しくて安いミナミマグロの中トロをお送りします。せっかく豊洲からお取り寄せするのですから、普段入手できないこのミナミマグロをお買い上げください。これぞマグロといった味ですから。 マグロの競り場 豊洲（旧 築地）市場のマグロの競り場には、毎朝数百本のマグロが並べられます。並んだマグロは同じように見えても、一尾一尾身質は違います。競りが始まるまでに一尾づつ丹念に下調べして、身質・脂のノリ具合などをチェックします。冷凍マグロの場合、尻尾を切り離した輪切り部分、切り返し(尻尾の手前のめくれている部分)を見て評価します。尾の身をほじくって手で練って脂のノリをみる。熟練の経験が問われます。朝5時30分から競りが始まります。台にのってる荷受(大卸)の競り人が順番にマグロを競ります。手で競り値(手槍を突くという)を出して競り合います。その日のマグロ相場、他の仲卸との駆け引き、残りの本数などを頭に入れて、瞬時に判断し手槍を突きます。よいマグロを仕入れられるかどうか勘と経験が問われます。 マグロのサクの形 ミナミマグロの中トロ約500gです。ミナミマグロの腹の血合い下の部分で、中トロの中でも特に旨い部位です。500g前後でサクは2-3つになります。なるべくお刺身が引きやすいようにサクにしてあります。 マグロの解凍方法 マグロは解凍方法によって大きく味に影響がでます。せっかく美味しい魚を買ったのに、解凍方法でマグロを台無しにしてはもったいないです。解凍方法は下記のように2種類(氷水解凍と温塩水解凍)があります。手間がかかりますが「氷水解凍」をお勧めします。 マグロのお刺身の切り方 マグロの切り方にちょっとしたコツがあります。プロの板前に教えてもらった切り方です。
