日本代购-【内容(量)】天然本マグロ 大トロ500g 【原材料(産地)】クロマグロ（アイルランド） 【賞味期限】冷凍保存で2ヶ月 【注意点】家庭用の冷凍庫保管の場合、2-3週間以内に食べて頂いたほうがよいです。時間がたつとマグロの色が茶色くなることがありますが、味には問題ありません。 【備考】一人前を100gとすると(刺し身にして6-7枚)約5人前になります。「マグロの解凍方法・切り方」説明書（築地魚群ガイドブック）が付いてます。豊洲市場に入荷するマグロは主に5種類（本マグロ、ミナミマグロ、メバチマグロ、キハダマグロ、ビンチョウマグロ）ありますが、マグロの王様として名高いマグロが本マグロです。天然の本マグロは太平洋を回遊するものと、大西洋を回遊するマグロの2種類が存在します。毎年話題となるマグロの初競りで競りにかけられるものは太平洋マグロで、青森大間や津軽海峡を挟んだ対岸の北海道戸井で水揚げされます。初競りのご祝儀価格とはいえ、1尾何千万円で競り落とされています。このマグロは大西洋を回遊する天然本マグロです。アメリカ東岸のボストンからアイルランドまで北上しています。アイルランドは北緯50度以上（青森県大間は北緯41度）にあり、マグロの漁場としては最も北に位置しています。そのためアイルランド産の本マグロは極寒の荒海にもまれ、身が引き締まっています。一般的には大間の本マグロが有名ですが、大間に限らず国内で水揚げされた天然本マグロは生の状態で市場に運ばれます。対して冷凍の本マグロで豊洲市場内で最も評価が高いマグロが、アイルランド産になります。有名高級寿司店や割烹料理店が名指しして仕入れているマグロですので、味は折り紙付きといえます。流通価格が高値のため通常はスーパーでは販売されていません。スーパーで販売される本マグロのほとんどが養殖ものです。近年、養殖マグロの品質は良くなってきていますが、天然の本マグロがもつ力強い旨味には及びません。養殖本マグロに脂っぽさやくどさを感じる方に、天然本マグロの大トロをお勧めします。養殖本マグロと天然本マグロの大きな違いは脂の質にあります。アイルランド産本マグロの大トロは適度に脂がのっていて、すっと口の中で脂が溶け旨味がひろがります。本マグロの豊かな味の濃さと溶ける脂の旨味が、大トロの美味しさを決定的にしています。天然本マグロの大トロがたっぷりと500gありますので、存分に大トロの旨さをご堪能ください。マグロは解凍方法によって味が変わりますので、商品と一緒にお送りする「マグロの解凍方法」を参考にしてください。解凍を手順通り行えば、しっとりねっとりとした極上のマグロになります。 商品形態 市場ならでは簡易包装です。 最北のマグロ漁場、極寒の厳しい海 アイルランド沖はマグロ漁場としては最北の北緯55-60度にあり、青森県大間と比べてさらに北に位置します。水温10度以下、極寒の厳しい海を回遊するマグロは、身がしまりかつ寒さに耐えるために上質な脂を蓄えています。マグロの味は育った海域に大きく左右されるだけに、アイルランド沖は最高の漁場といえます。 豊洲市場に入荷するアイルランド産本マグロ 冷凍本マグロとして最も評価が高いアイルランド産本マグロは、豊洲市場に入荷され競りにかけられます。切り落とされた尾の身や魚体の形などから、より上質な本マグロを選別し競り落とします。魚体が大きければ美味しいというわけではないのが、マグロの目利きの難しい点です。天然本マグロは品質が一定の養殖マグロと違い、目利きには深い経験いります。 熟練の技、冷凍マグロの解体 競り落とした本マグロは魚体に合わせて丁寧に解体します。マグロ解体用のバンドソーで半割〜4ツ割、そして刺身用に柵（サク）取りします。マグロはそれぞれで冷凍状態が違うため、解体にも熟練の経験が必要とされます。 高級寿司店が愛するアイルランド産天然本マグロ 国産の生本マグロが水揚げされる時期（旬）は限定されます。時期はずれの国産本マグロより、旬の時期に瞬間冷凍されたアイルランド産本マグロのほうが美味しいです。マグロの仕入れに妥協がない高級寿司店や割烹店が、名指しでアイルランド産本マグロを使用しています。 最高級の天然本マグロ 天然本マグロがもつ、マグロの味の濃さ・芳醇な香り・口に残る酸味をご家庭で味わってください。赤身・中トロ・大トロそれぞれが特徴的な味わいを秘めています。養殖ではない天然にこだわった本マグロをお届けします。 マグロの解凍方法と切り方 マグロは解凍の仕方や切り方によって色味、食感、旨みが全然違います。商品に同梱している説明書（ガイドブック内に記載）を参考に下準備をされることをおすすめします。
