日本代购-日本のラン藻から史上最大の分子が発見された 椛田聖孝　金子達雄　著　文庫サイズ・48頁 まえがき　——　日本固有のラン藻が秘めた驚異の保水力・機能性 スイゼンジノリとサクランという名前を聞いたことがありますか？　ハイと答えた人は、生物学、生態学、最新の科学情報などに造詣の深い人でしょう。 スイゼンジノリとは、日本固有の淡水産ラン藻です。 ラン藻の歴史は非常に古く、約35億年前までさかのぼります。 地球誕生以来、生命体は、水（海）の中でのみ生存していました。 それは、その当時、宇宙からの危険な光線である紫外線などを防ぐオゾン層がなかったからです。 生物が水中（海洋）から陸上に進出し得た最大の要因は、酸素光合成を営む生物の出現でした。 海洋性ラン藻（マリン・シアノバクテリア）は、まさに、その主役でした。 言い換えれば、現在の地球環境を形作った、立役者の一人がラン藻であり、スイゼンジノリは、その進化した仲間です。 一方、サクランは、スイゼンジノリから抽出された新規多糖類で、自然界では過去に報告の例がない史上最大の分子です。 名前の由来は、学名の一部、サクルム（神聖な）に因んでいます。 吸水力が、純水で自重の約六千倍と極めて高く、また、インジウムなどの稀少金属が付着するとゼリー状に固まることから、化粧品原料、医薬品、工業材料など、日本固有の貴重なバイオ資源として期待されています。 また、江戸時代から、細川藩（熊本）・秋月藩（福岡）が、徳川幕府に献上した貴重な伝統食品としての側面もあり、本書では、これらについて分かりやすくご紹介します。 ●スイゼンジノリ食品加工の歴史 現在、スイゼンジノリは、朝倉市の「遠藤金川堂」と「喜泉堂」が主に養殖、加工、販売を行なっていますが、その加工品の中心である乾燥海苔は、秋月藩御用商人であった遠藤家の7代目が、寛政5（1793）年に製法を完成させたものです。 松尾芭蕉が「吸い物は先（まづ）出来（でか）されしすいぜんじ」と、スイゼンジノリの加工品を詠んだように、昔から吸い物の具、あるいは、慶弔時の料理にある「だぶ」（くずでとろ味をつけた汁に具を入れた郷土料理）の素材として重用されていました。 または、生ノリを塩水で洗ったものを三杯酢で食したり、砂糖で煮詰めたものをお茶請け菓子として食すなど、精進料理や茶懐石料理にも利用されていました。 スイゼンジノリ乾燥海苔の製造法は、現在も、200年前と基本的には同じです。 ●昔ながらの製造法で現在も まず、川から収穫したスイゼンジノリの徹底した水洗から始まり、良い材料だけを選別して、ミンチ機ですり潰し、ペースト状にして、素焼きの平瓦に手際よく、32×20 cmの大きさに塗りつけます。 江戸時代は、石臼を用いてすり潰していました。 「平瓦」で1日半ほど陰干しした後、弓なりに反り返った「谷瓦」の谷の部分に張りなおし、海苔がついた面を下向きにして室外で天日干しにします。 これを、スギ板に4枚ずつ張りつけ、表面をさらし木綿で、丁寧に磨き仕上げます。 これら全行程は約2週間かけて行なわれます。 目　次　—— 第1章　スイゼンジノリってどんなノリ？ 　　　・日本固有の淡水性ラン藻 　　　・国指定天然記念物に 　　　・今は絶滅危惧IA類に 第2章　新発見「サクラン」って何？ 　　　・スイゼンジノリ固有の成分 　　　・天然物質で最大級の多糖類 　　　・驚異的六〇〇〇倍もの保水力 第3章　期待される実用化の数々 　　　・化粧品の保湿剤として 　　　・傷の治りを早める結果も 　　　・稀少金属の回収剤として 　　　〈コラム〉バイオマスサイエンスとは 第4章　伝統食品は健康食なり 　　　・高級郷土料理の素材そして加工品 　　　・機能性食品としての働きも 【ハート出版ふるさと文庫】新発見「サクラン」と伝統のスイゼンジノリ
