日本代购-ドメーヌの中心には、Lionel DeveneyとJérémy Marsという二人の意外な出会いがあります。Lionelは幼い頃からこの世界に触れる機会を得たブルゴーニュの養子であり、一方Jérémyはブルゴーニュの生まれで、自分自身のぶどう畑を作りたいという強い願望を持っていました。彼らの道は偶然交わり、最初の1ヘクタールのパーセルをAuxey-Duressesで取得しました。このワインは、その畑「Pain Perdu（パン・ペルデュ）」にちなんで名付けられています。 明るく輝くルビー色。非常に新鮮な口当たりです。燻製のような焙煎香が強く、特徴的なパンペルデュの畑のアロマが感じられます。モレロチェリーやレッドカラントのノートがあり、パワフルで強烈な印象を与えます。 生産地：フランス/ブルゴーニュ 品種：ピノ・ノワール 容量：750mlドゥヴネイ・マルス Deveney Mars 透明感と柔らかさを表現し、真の意味での「テロワール」の追及。 2015年スタートのブルゴーニュ地方の若手生産者。ワイナリー創業当初は、ボーヌに拠点を構えていましたが、2018年からピュリニー・モンラッシェへ移転。ワイナリーの名前は、栽培と醸造を務めるジェレミー・マルス（写真左）と、ワイナリーの経営などバックアップを担当するリオネル・ドゥヴネイ（写真右）の、二人の名前からとりました。ジェレミーは、ブルゴーニュ地方の醸造学校で栽培、醸造学を学んだあと、ムルソーのミッシェル・カイヨのもとで6年間、ワイン造りを学び、叔父のシャンパーニュのワイナリーや、南アフリカでの研修を経て独立しました。 ドゥヴネイ・マルスでは、ワイン造りにおいて、特に栽培に重きを置いています。彼らの管理する畑は、他の生産者所有のものと比べると、樹勢に優れ、果実の健康状態や成熟度にも目を見張るものがあります。除草剤や化学肥料、防虫剤を使用せず、できるだけ土地を耕さずに、下草に畑の栄養と健康状態の管理をさせる手法をとり、品質の高いブドウを得ることに努めています。 ドゥヴネイ・マルスでは、2020年現在、オーセイ・デュレス村やオート・コート・ド・ボーヌ、AOCブルゴーニュなどの自社畑を所有し、ワイン造りを行っておりますが、他にも銘醸地であるヴォーヌ・ロマネ村やムルソー村などのブドウを農家から買い付けてワイン造りを行っています。ワイン醸造では、そのブドウが生まれ育った畑の土壌や気候条件が造り上げる繊細な味わいの違いをワインに表現するために、可能な限りの人的な介入を避けることを念頭に置き、赤ワイン白ワイン共にほとんど同じ醸造の方法を取ります。 具体的には、ワインの種類問わず、「澱引きや清澄を行わないこと」「新樽比率は一定（30～40％　※生産量により多少比率は上下します）にしてワインを熟成させること」などが挙げられます。さらに樽による味わいの変化を最小限に抑えるため、常に一つの樽会社に樽を発注し、白ワインであれば「Légère Longue（軽くゆっくりと時間をかけた火入れ具合）」 「Moyenne Longue（中程度のゆっくりと時間をかけた火入れ具合）」と火入れもすべて一定に指定してます。ドゥヴネイ・マルスのワイン造りでは、醸造がシンプルな分、醸造でワインの品質をごまかすことは決してできないので、品質のよいブドウを使用することによってクオリティの高いワインを生産することに努めています。 　当主ジェレミーの生産するワインは、介入を避けることによって、各地のテロワールを明確に表現する一方で、彼のやさしくフレンドリーな性格を表すかのように、ジューシーな果実味、柔らかくも滋味深い味わいを持ち、体になじむような飲み口を表現しています。 味わいの甘み酸味渋みのバランスが良く、いつどんなシチュエーションで抜栓しても素晴らしいパフォーマンスを示してくれるワインと言えるでしょう。成長著しいワイナリーの勢いはさらにスピード感を増し、現在、フランス各地で10を越える星付きレストランで彼らのワインが採用されています。
