日本代购-【赤】【イタリア：トスカーナ】 【品種：メルロー100％】 【容量：750ml】【アルコール度数：14％】 【熟成：バリック58%＆アンフォラ 42% で13 ヶ月】 プティ・ヴェルド同様に、 Podere Albiano 社から購入したメルロ 100 ％で生産。 全房発酵で低温マセラシオンを行い、 フリーランジュースのみを使用。 熟成に一部アンフォラを使用しているが、 このアンフォラはトップメーカーの 1 つである Tava 社にこのワインのためにわざわざ特注したという 気密性の高いアンフォラを使用している。 マシュー自ら「このワインはトスカーナで造られる 上質なメルロの中でも、傑出した 1 本である。」というほどの自信作。M.L.Fioretti8CERBAIONA) マシュー・フィオレッティ（チェルバイオーナ） 『幻のブルネッロ』とも呼ばれた Cerbaiona を、 さらなる高みへと 引き上げ続けている 新オーナーが生み出す新たな ネゴスライン チェルバイオーナはモンタルチーノの街から南東に4km、ブルネッロ・ディ・モンタルチーノの創始者として知られるビオンディ・サンティに程近いチェルバイアと呼ばれるエリアにワイナリーを構えており、1977年からディエゴ・モリナーリによって所有されていた。 この近辺にあるワイナリーのうち、特に有名なのが「チェルバイオーラ（サルヴィオーニ）」と、この「チェルバイオーナ」である。先がけてワイン造りを始め、サルヴィオーニにワイン造りを勧めたのがこのワイナリーであることはあまり知られていない事実である。（チェルバイオーナのブルネッロのリリースが1981年、チェルバイオーラは1985年） 現在、チェルバイオーナは4haの畑を所有している。海抜は350〜400m程で、区画はブドウの植樹年によって大きく3つに分かれている。土壌はガレストロと呼ばれるトスカーナ地方特有の泥灰岩で構成される。 ブドウはオーガニック栽培によって育てられ、醸造は大きさの異なる開放型の木製発酵槽を使用。自然酵母による自然なアルコール発酵を行う。また、ロッソでは12ヵ月、ブルネッロでは30ヵ月と規定を上回る樽熟成を行っている。 チェルバイオーナでは、収穫時にブドウのセレクションを行うだけでなく、セラーでも樽ごとのセレクションを行う。品質に納得がいかなければ全て格下げする程の徹底した品質主義で、ワイナリー購入から数十年の内に一気にスターダムにのし上がった。また、トータルの年間生産量が20000本と希少性が非常に高いことから、カルト・ブルネッロの地位も確立した。 健康状態が良くなかったディエゴは、2014年を最後にワイナリー売却を決意。ワイナリーは新体制となった。2015年に2010年のブルネッロが世界的なワイン評価サイト「VINOUS」で100点という驚異的なスコアを獲得し、改めて世界中の注目を浴びることになった。しかし、その評価だけで購入されることや今後の価格急騰を危惧し、2017年2月「我々のワインに対してスコアやレビューをつけることを一切禁止する」とマスコミ各社へ公式声明として発表した。 評価ではなく、純粋な好奇心を持ってワインの本質的な美しさ・尊さを味わうという考えは、伝統を尊重するディエゴの意志を確実に受け継いでいると言え、今後もブルネッロ・ディ・モンタルチーノ最高峰の生産者で居続けることだろう。 カルト・ブルネッロとして名高い Cerbaiona を 、 2015 年当時の 「イタリアでの ワイナリー買収額の最高額 」で買い取った 新オ ーナー、マシュー・フィオレッティ。 彼はこの買収後も 、 究極のブルネッロを作るために様々な投資と 改革を行い続けているが、その意欲は 全く とどまることを知らないようだ 。 モンタルチーノでのワイン造りだけでは飽き足らず、トスカーナの秘めた ポテンシャルを改めて 世の中に知らしめるために 立ち上げたのが 、 この自身の名を冠するネゴスラインである。 彼はもともと、すでにトスカーナで数々の成功を収めてきたボルドー系品種の可能性に 着目しており、いつかは自分でも作ってみたい、そしてきっと成功できるはずだと信じ ていた。そんな折、幸運にも“イタリアの鬼才 ア ンドレア・フランケッティ”がその 質を認めたブドウを購入できる好機に 恵まれ、このプロジェクトが実現した。 生産量はごく少量なため、 Cerbaiona としての取引先の一部にしか 卸されておらず、 その希少性は Cerbaiona のワインに勝るとも 劣らないと言える。この先、市場においても争奪戦になるであろうことは 想像に難くない。
