日本代购-＜商品情報＞ 品　名 ドメーヌ・デ・ランブレイ　フィーヌ 1986〜1987 英　名 Fine de Lambrays (Clos des Lambrays 1986&1987) 生産地 フランス/ブルゴーニュ地方 区分 ブランデー/フィーヌ 味の強さ ●●●〇〇 ＜コメント＞ ドメーヌ・デ・ランブレイとは ブルゴーニュの特級畑の1つ「クロ・デ・ランブレイ」と言えば、ワイン愛好家なら垂涎でもあり「コート・ド・ニュイの宝石」の異名を持ちます。そして、この畑の99％を所有しているのが「ドメーヌ・デ・ランブレイ」です。 この畑は、モレ・サン・ドニの中心部にあり、400年以上もの間、修道院の人々によって守られてきました。 1979年にオーナーであったサイエ家が、栽培と醸造のスペシャリスト、ティエリー・ブルーアン氏を醸造長に起用し「全房発酵」や、畑の抜本的な改革を行ったことで、1981年にブルゴーニュの長い歴史の中でも史上初の快挙となる、AOC法の施行後で、初めて特級畑へ昇格しました。 これに目を付けたのがあのLVMH（モエ・ヘネシー・ルイ・ヴィトン）で2014年にこの宝石の新しいオーナーになりました。彼らは畑をさらに調査すると、ジュラ紀の岩盤は、複数の地層であることがわかり、クロ・デ・ランブレイが特別な畑であったことを確信します。 「全房発酵」による伝統的な製法は今でも守られており、パワフルでエレガント、しなやかで骨太のピノ・ノワールワインは1本が5〜10万程の価格で販売され、愛好家の憧れのワインの1つとされています。 さて、こちらのドメーヌ・デ・ランブレイのフィーヌですが、自社に眠っていたクロード・デ・ランブレイの1986年と1987年のワインの樽から、特別に蒸留した稀少中の希少なフィーヌ。 もともとは、自社基準に達しないとの理由だったのですが、2004年度にフランス国内で開催された「フィーヌ・ド・ブルゴーニュ」の品評会で、思いがけなくと1位に輝きました。しかも、この時の2位が「ドメーヌ・ド・ラ・ロマネ・コンティのフィーヌ」だったことで、業界は驚きを隠せませんでした・・・。 しかし、このランブレイのフィーヌは、2つの年のヴィンテージを一緒に蒸留させたことからも営利目的で蒸留したわけでもなく、生産本数はごく僅かで殆どファミリーによる消費用として蒸留したような物でした。 そのため、ドメーヌのセラーに残っているのは数十本となっており、ましてや、ランブレイが近年、某巨大メーカーに吸収されたこともあり、家族経営の時代の、ドメーヌ・デ・ランブレイのフィーヌは・・・。 マールとフィーヌの違いについて マールはワインの発酵が終わった際に、「ワインの搾り粕」を使うと言われておりますが、その粕にもレベルがあるわけで「どのワインを造った時の粕」なのかによって品質や値段が異なります。 原料となる搾り粕は、「日本酒の板粕」のような感じではなく、そこには「大吟醸粕」のように酒の成分が相当残っており、発酵後なのでアルコールも含まれています。 一般的に、1本のワインに1〜1.5kgのブドウを使用すると言われており、 ブドウが100kgあれば、タンクの1/4以上がマールの原料になります。 良質なワインの生産者ほど、ワインを抽出する際にエグ味などが出ないように、極限までブドウを圧搾しませんので、原料の搾り粕には良質なワインが多く含まれ、それを原料にブランデーができるという具合です。 フィーヌは、ワインを蒸留したブランデーです。その多くは発酵が終わりオークで熟成されたワインをティスティングした時に、他の樽に比べ熟成によって酸が高すぎたりしたワインをフィーヌ用としてブランデーにされる場合が多いのですが、それでも良質なワイン（＝良質なブドウ）が原料になることは間違いありません。 ここで、安い原料のフィーヌもあるのでは？という疑問も浮かびますが、これくらいの規模では、「有効活用どところか手間暇の方が高くつく」ので、そのような樽は、大手や組合に売却してしまった方がよほど効率的なのが事実で、「趣味に近い感覚」で造られている事が殆どです。 更に、コニャックを含め多くのブランデーは、飲みやすくしたり、色合いを濃くしたりする為に「カラメル」の添加が認められており品質調整をしますが、フィーヌやマールは趣味感覚なので（本業ではない）ので、化粧っ気こそないですが「ブドウの蒸留酒の素顔」が楽しめます。 つまり、フィーヌやマールの生産者＝ワインに愛情のある生産者＝そこのワインは良いワインと言っても言い過ぎではないと大越は思います・・・ 販売店：リカープラザ大越酒店 輸入元： その他： ※店舗併用在庫につき品切れの場合がございます ※在庫詳細につきましてはお問合せ下さいませ。 ※画像はイメージにつきデザイン等、変更となる場合がございます。
