日本代购-2017YTがジェームス・サックリングにて飲むべきボバル ベスト.8に選出 ボバル種の最上区画、ピエ・フランコ(P.F.)はフィロキセラを免れた貴重な畑。樹齢90年もの古木が生み出す凝縮感と絹のような滑らかさは秀逸。 生産者名：Bodegas y Vinedos Ponce　ボデガス・イ・ビニェードス・ポンセ 商品名：P.F.　ペー・エフェ ヴィンテージ：2023 原産国：スペイン 地方：カスティーリャ・ラ・マンチャ 品質分類・原産地呼称：マンチュエラD.O. 品種：ボバル 100% 醗酵：オーク樽醗酵(4500L、600L)、オーク樽にてマロラクティック醗酵 熟成：オーク樽熟成10ー12カ月(フレンチオーク、4500L、600L、新樽は使用せず) 平均年間生産量：8500 ビオ情報：ビオロジック 認証情報：CAAEボデガス・イ・ビニェードス・ポンセ　 - Bodegas y Vinedos Ponce - マイナー産地、マンチュエラに彗星のごとく現れた“新世代”の造り手 “マイナー産地、マイナー品種ボバル”　 　　　　　　　　　　　　　　　〜ハンデと言われたもの全てを個性に昇華したボデガ〜 スペインの新しい流れを象徴する醸造家、フアン・アントニオ・ポンセ氏により設立されたワイナリー。 もともとは代々ブドウ畑を所有しブドウ栽培を行ってきた栽培農家で、ピエ・フランコ（接木をしていないフィロキセラ禍以前の樹）の畑を多く所有。ワイナリー設立以前は、共同組合にブドウを販売していました。 現在のワイナリーは、2005年、オーナー兼醸造家のフアン・アントニオ・ポンセ氏により設立。10代の頃から畑で父親の手伝いをしていたフアン・アントニオは、ワイン造りへのアイデンティティーも早くから発見します。14歳から18歳までをレケナの栽培・醸造学校で学び、地元イニエスタの協同組合での醸造アシスタントを経て、2001年から2006年までの間、テルモ・ロドリゲスのもとで働きます。13地域に及ぶワインのブドウ栽培、醸造、熟成、瓶詰めに至る全ての工程の責任者として活躍し、テルモの右腕として大きな成長を遂げた彼ですが、どんなときも故郷マンチュエラにある畑を忘れたことはありませんでした。 やがてこの経験を通してある一つの考えにたどり着きます。それは「品種の純粋さに賭けるべきなのではないか」ということでした。そして2005年、24歳になった彼は、この想いに突き動かされ、かねてからの夢である地元でのワイナリー設立を決意。マンチュエラという2004年に新設されたばかりのマイナーな産地で地元品種ボバル100％のワインを造るという、新しい挑戦を始めました。 ■“リリース直後から注目の的”　　　　　〜マンチュエラ、ボバルの代名詞に〜 「個性豊かなワインを造るには、畑では人の手による変化を最小限に止めることだ」と考えるフアン・アントニオにとって、ブドウ栽培における第一の師は父。鋤で畑を耕すこともせず、雑草を生やしたままにしていたり、収穫で大量のブドウを捨てたりする彼のやり方は隣人たちの非難や冷やかしにさらされ苦難のスタートとなりました。しかし、ワイナリー設立後わずか1〜2年で本当は誰が正しかったのか証明されることになります。 パリにも支店を持つマドリッド最大のワインショップ、LAVINIAに認められたフアン・アントニオ氏のワインは、瞬く間に国内外で注目の的になりました。LAVINIAをはじめとする高級ワインショップを通して、多くの高級レストランでも取扱いされている他、国内外のメディアでも頻繁に取り上げられています。また、リリース直後から専門誌で大変高い評価を集めていることも注目される点です。 地元への愛情とワイン造りへの情熱に溢れたフアン・アントニオは、当時まだ20代の若さながら既にボバル種の栽培において第一人者となり、注目が高まるボバル種とその醸造についての講師としても様々な勉強会に招待されるなど活躍の場を広げています。名も無き地元品種ボバルは、彼の手により『真の表現力』を開花させたといっても過言ではありません。マンチュエラという土地を愛しそこに根付いたボバルという品種を知り尽くしているからこそ、テロワールを尊重したワイン造りに情熱を傾ける、まさに職人的な造り手です。大きな可能性がどこまでも広がる、新しい世代の造り手です。  未知なる偉大な産地、マンチュエラD.O.とボバルの魅力 ＜栽培面積＞ 現在は自社畑より樹齢の高い（30～70年）賃貸契約の畑10haを含め約32ha。 畑は30以上に細かく分かれた区画から成り立っている。灌漑設備はなく、化学物質も一切使用していません。 ■開花したポテンシャル、ボバル■ ボバル種は、ジャンシス・ロビンソン著ワイン用葡萄ガイドで、「スペイン南東部のバルク・ワイン生産地域で集中的に栽培され、深い色調の赤ワインを造る重要なスペインの品種」と紹介されている地元品種です。 この地域には、樹齢のかなり古いボバルも比較的広く残っていますが、バルク・ワイン用としか見なされていなかったことから、長くその可能性は追求されることはありませんでした。その為、古く貴重な木でも引き抜かれてしまい、国際品種に転換されることが多いのが実情です。また、政府の減反政策もあって、本来は貴重な地ブドウ、中でも最も貴重な古木の畑から木々が引き抜かれているというのが現状でもあります。ポンセでは、できる範囲でそれらの貴重な畑を購入、または賃貸するようにして、保存の努力をしています。 ■ボバル種の特徴 ボバル種の葉はとても大きく、葉が上から下へと被さるように生い茂る様子はある種異様に見えますが、この姿であることでブドウの実を直射日光から守っています。照り付ける日差しは強烈ですが、湿度がないため日陰の部分はとても涼しいのが特徴です。日差しが照り付ける国際品種などとはとても対照的。土地に馴染んだボバルはまた、病気にもなり難い品種です。 丹念に手入れされたボバル種は、深い色合い、コケモモを想わせる美しい香りとボディを持ったオリジナリティ溢れるワインとなります。 パラソルのように葉が広がりブドウの実を強烈な日差しから守るまさに“ガレージワイン”。必要最小限の設備しかないセラー醸造には様々な容量のフレンチオーク樽を用い、区画ごとの特徴に合わせてそれらを上手く使い分けています。アメリカン・オークはフレーバーがワインのスタイルに向かないため、一切使用していません。 驚くべきは、非常に限られた、「必要最小限の設備しかないセラー」。まだ若く資金にも乏しいこのボデガでは、立派なセラーを建てるのはまだ少し先の話で、今はもともとマッシュルームを加工・保存する倉庫だった建物をセラーにしています。保存用のチルド室を利用して、小箱で収穫されたばかりのブドウを冷却。醸造に使う樽も、容量には他のワイナリーでは見られないほどのバリエーションがありますが、樽の数自体は限られています。区画毎に醸造することを徹底しているにも関わらず、それにしては少なめな樽。ですが、フアン・アントニオの経験と熟練した技術で、上手く樽を回転させている為、障害はありません。 洗練されたワインを造るのに、立派なセラーは時として必要のないことを教えてくれます。
