日本代购-商品説明生産者ボデガス・ルイス・ペレス/ Bodegas Luis Perez Fino Caberrubia Jerez-Xeres-Sherry Carrascal生産地アンダルシア州 D.O.ヘレスブドウ品種パロミノ・フィノ 内容量750ml 辛口シェリー特徴など酒精強化していないワイン。アルコール度数:15％販売者東京都調布市深大寺南町1-20-7特選スペインワイン発見！世界三大酒精強化ワインの一つで、イギリスをはじめ世界中に多くの愛好家がいるシェリー酒。醸造法もユニークで、ワイン教則本などを見ると「産膜酵母を張らせて造る白ワインの一種」「ソレラシステムによって熟成ブレンドされるワイン」と書かれています。しかし…そんな概念が変わります ■日本初お目見え！新感覚のシェリー ひと口にシェリー酒と言っても、辛口のフィノから極甘口のペドロ・ヒメネスまでさまざまです。ただ製法は厳格に定められており、どのタイプのシェリーも醸造過程で酒精強化（アルコール添加）、ソレラとクリアデラ（樽の積み上げ）熟成を経て作られます。そんな、これまでの常識を変えたのが、ボデガス・ルイス・ペレスのフィノ「カベルビア(サカ・セイス)」です。 この辛口フィノは、夜間に摘んだブドウを数時間 天日で干し、昔使われていた伝統の垂直式プレス機で搾汁。これをオーク樽で発酵・熟成するだけ。酒精強化も、ソレラ熟成もしません。200年前と同じ方法で作られ味わいは、フレッシュでエレガント。これまで慣れ親しんできた酵母を感じさせるフィノとは全く違う印象で、コクがあり、果実味があり、丸みを帯びています。チーズや生ハム、オリーブなどのツマミによく合いそう。 世界で最も美味しいと定評の三ツ星レストラン「カンロカ」、サン・セバスチャンの「ベラサテギ」「アルサック」…など、グルメが集うレストランのワインリストに入っています。パーカーポイント93点。生産本数はわずか4,000本足らず。ぜひとも飲んでみたい珠玉の逸品です。 ■ブドウの日光浴で糖度も味わいも凝縮 ヘレス地区は、シェリー作りの長い歴史の中で、酒精強化やソレラ熟成をしていなかった時期があります。かつてはどの農家でも行なっていた天日干しは、ブドウの余分な水分を飛ばし糖度を濃を上げるためのものでしたが、丸いゴザに広げたブドウを定期的にひっくり返す作業は手間も時間もかかります。しかし味わいはまったく異なるものになります。 ■ボデガス・ルイス・ペレスの挑戦 カディス大学の醸造学の教授であり、シェリー醸造家でもあるルイス・ペレス・ロドリゲス氏がボデガ（ワイナリー）を作ったのは2002年のこと。通常のワインに加え、古代からの技術を用いて作るシェリーの新プロジェクトをスタート。酒精強化もソレラ熟成もせず、テロワール（土地がもつ個性）を生かしたシェリーを作ることを目指しました。 ■かつてのシェリーを復元させた挑戦 「先見の明のある」ワイン生産者が、長年のルールや規範に縛られない柔軟な発想で、新たなカテゴリーのワインを生み出すことは、とてもエキサイティングなことです。スペインのシェリー銘醸地ヘレス・デ・ラ・フロンテーラにあるボデガ・ルイス・ペレスは、そんな歴史に埋もれていたスタイルや伝統をよみがえらせた一つのケース。現在普及しているシェリーを否定するのではなく、昔ながらのスタイルがいかに面白いかを物語ってくれる一本です。 ■一度は飲んでみたい200年前の味わい ボデガス・ルイス・ペレスの「カベルビア」は、ソレラが開発される以前の方法、つまりその年の気候をそのまま表現するため、ヴィンテージごとに別々の樽で醸造され、それぞれの異なるアロマの特徴を生かしながらベストの比率でブレンドされます。この「サカセイス」は2017(暖かい年)、2018(フィネスの年)の樽をブレンドした辛口タイプです。
