日本代购-【正規代理店商品】 シャンベルタンでは、より冷涼なパートから偉大なワインが生み出される。クラシックで寛大であり、さらさらとした軽い飲み心地ではないが、味わいに固さはない。長期保存のチャンピオンで、これを上回るものは無い。 1956年生まれ。洋菓子職人から転身し、ブルゴーニュ・ワインの黄金時代を手がけた偉大なる醸造家たちから伝統的なワインつくりを独自に習得し、1988年わずか32才にしてのネゴシアン業をスタートさせました。 ローラン氏のこだわりは、ヴィエイユ・ヴィーニュの使用（50年以上が基準）、自作の樽（マジック・カスク）へのこだわり、最小限の亜硫酸の使用、ノンフィルターなど近代的な技術に頼らない自然で伝統的な醸造法にこだわり、今ではブルゴーニュでも5本の指に入る醸造家に昇り詰めました。 ドミニク・ローランが買い付けてくるヴィエイユ・ヴィーニュのワインの中から樽熟成開始約1年後に樽から試飲して、最良のものだけを選んでキュヴェ・ヴィエイユ・ヴィーニュとして位置づけています。 「マジ・シャンベルタン グラン・クリュ ヴィエーユ・ヴィーニュ BIO」は、ジュヴレ・シャンベルタンの特級畑の中で最も北方、シャンベルタンやクロ・ド・ベーズと並ぶ斜面の北隣に位置し、最も野性的な力強さを魅せると言われる特級畑マジ・シャンベルタン。シャンベルタンでは、より冷涼なパートから偉大なワインが生み出される。クラシックで寛大であり、さらさらとした軽い飲み心地ではないが、味わいに固さはない。長期保存のチャンピオンで、これを上回るものは無い。 クラシックなスタイルのマジ・シャンベルタンは洗練の極み、寛大でありながら、メゾンでも屈指の長期保存が約束されている。10年程経つと葉巻の香りとシダーの香が出てきて並外れた凝縮感と熟成を約束してくれます。 ■ドミニク・ローラン氏のコメント■ シャンベルタンの冷涼なグラン・クリュのエリアから偉大なワインが生み出されます。2017年の遅い時期の収穫は非常に重要で、特にこのクリマでは必要でした！私はマジ・シャンベルタンを多く飲むタイプではありませんが、このボトルを開けるとそれを認めざるを得ません…。古い！良い意味でいつも驚かされます！このクリュは長期熟成に向いています。 ■テクニカル情報■ ネゴシアンのワインなので大部分のブドウは全房発酵(除梗せずぶどうを房ごと発酵させる)するよう推奨している。熟成は自社の工房で造る最高級熟成樽「マジックカスク」の使用。熟成過程で最も大事にしていることは「オリとの接触」です。オリと接触させることで非常に繊細なワインができあがる。最小限の酸化防止剤の使用(瓶詰め前に少量)、ノンフィルター、コラージュ無しを徹底しています。ドミニク・ローランの哲学は「ブドウからワインに生まれ変わる過程に、人間は合理的に最小限に関わるべき」というもの。 Dominique Laurent Mazis Chambertin Grand Cru Vieilles Vignes Bio ドミニク・ローラン マジ・シャンベルタン グラン・クリュ ヴィエーユ・ヴィーニュ BIO 生産地：フランス ブルゴーニュ コート・ド・ニュイ ジュヴレ・シャンベルタン 原産地呼称：AOC.
