日本代购-ギヨーム・ボワイヨが手掛ける最初のヴィンテージ2021年! 2019年が初ヴィンテージ。アンリ・ダルナより取得したモノポール畑「クロ・リシュモン」。ボワイヨ家は1630年からの記録に残るヴォルネイで最も古い家柄の一つで、ドメーヌの創業は1885年。現在の当主アンリ・ボワイヨ氏は5代目で、その息子も2006年からドメーヌの仕事に参加しています。ピュリニー・モンラッシェとヴォルネイを中心に約15haの畑を所有しています。 1996年にネゴシアンものを造るメゾン・アンリ・ボワイヨを設立。プルミエ・クリュやグラン・クリュはテロワールを表現するために、各畑1生産者だけからブドウもしくは果汁の状態で購入しています。「ムルソー 1er クロ・リシュモンモノポール」は、クロ・リシュモンは新たに取得したモノポール畑で、2019VINが初ヴィンテージ。1級レ・クラの一角にある区画。樽で発酵、熟成12ヶ月(新樽率60%)。白いモモやレモンの果実にアカシアの花や菩提樹のアロマに白胡椒のニュアンス。豊かなミネラルを思わせる風味があり、力強くパワフル。緻密でなめらか、フィネスを感じるワインです。 ■テクニカル情報■ 白は17VINより、今まで使用していた空圧式圧搾機からシャンパーニュ式の縦型の圧搾機に変更。よりピュアで澄んだ果汁が絞れるようになった。アルコール発酵は樽で約20日間かけて行う。熟成は通常よりも大きい350～600リットルの樽を使用し、ワインと樽との接点を少なくして緩やかな熟成を促す。滓引きとコラージュ後、軽いフィルターをかけ瓶詰めを行う。発酵時に使用しているのは野生酵母のみ。 DOMAINE HENRI BOILLOT MEURSAULT 1er CRU CLOS RICHEMONT ドメーヌ・アンリ・ボワイヨムルソープルミエ・クリュクロ・リシュモンモノポール生産地：フランスブルゴーニュコート・ド・ボーヌムルソー原産地呼称：AOC. Drink from 2026-2032. ■2021年ヴィンテージ情報■ 2021年は様々な意味で特別な年であった。 2012年から赤ワインの醸造を担ってきた私が今年から、父アンリの思い入れが特に強い白ワインも担うようになった。15年間、彼の傍で知識や進化を学んできたが、アンリボワイヨのすべてのワインの手綱と責任を引き継ぐことになり、とても嬉しく思っている。彼の情熱と厳格な基準が、ドメーヌの白ワインの品質と名声を形成してきた。私は彼の助言に従って、最大限努力をしていくつもりだ。私たちは伝統を重んじるだけでなく、気候変動に対応すべく自らを改革していくことを肝に銘じている。ブドウの栽培方法についてはこれまでとは違う視点が要求されていると感じている。ドメーヌにとって新しい時代の課題は、共生と調和に重点を置いたものである。【気候】 ●2021年も、この数年経験してきた新しい天候の例外ではない。 ●発芽は早かったが、4月7日の夜間に気温が-7℃まで下がったことで阻害された。 ●春の終わりから初夏にかけては晴れと雨が相次いだが、開花の気候条件は素晴らしかった。 ●4月の霜害によって50%以上のブドウを失った。 ●9月23日に始まった収穫は、成熟したブドウのみを厳選して行った。 ●ドメーヌが経験した中で、収量の最も少ない年であった。【醸造】白と赤の2色の醸造は、正確さと技術力の証である。【白】 ●収量は少なかったが、複数の区画をブレンドして造ることはなかった。 ●ムルソーグットドールとレペリエール、サントーバン、ピュリニー・モンラッシェレ・コンベット以外のアペラシオンは造ることができた【赤】 ●テロワールを自由かつ正確に表現するために、力強さに欠けていた赤ワインの熟成に新樽を用いるのは控えた。 2021年は高い品質とバランスを保つために、試練を乗り越えるエネルギーが求められたヴィンテージであった。赤と白の両方を担当するという私にとって初めてのプロジェクトを、皆さまとシェアできたことを嬉しく思います。ギヨーム・ボワイヨHenri Boillot　/　アンリ・ボワイヨ厳しい手積み作業によって生れる秀逸品　理想を求め、完璧さを追求するヴォルネーで最も古い家柄の1つで、ドメーヌの設立は1890年、現当主のアンリ・ボワイヨ氏の祖父が設立したドメーヌです。自社畑から造られるワイン（ドメーヌジャンボワイヨ）と買いブドウから造られるワイン（メゾンアンリボワイヨ）があります。現在、ロバート・パーカーのバイヤーズガイドにて、赤（ジャン　ボワイヨ）★★★★★　＆　白（アンリ　ボワイヨ）★★★★★5つ星（最高：OUTSTANDING）の評価を受けています。妥協を許さない完璧主義者。すでにいいワインを造るための「方程式」を習得し、徹底的に突き詰めている。アンリ・ボワイヨはそういうステージに達している生産者だ。ワインに「方程式」とは味気なくて恐縮だが、残念ながら解けていない造り手も多いのが実情だ。納得のいかないブドウは捨てること。最適なタイミングで収穫し、その後は余計な手を加えないこと。わかっていても最後に大きな差が出るのは、テロワールの良し悪しは別とすると、その徹底度合いに因るところが大きいのではないか。難しいヴィンテージの翌年春に訪れたときのアンリの表情は充実している。そして自慢話が延々と続く。病気が広まった年は選果をピンセットで行ったこと、暑い年ならキレイな酸とミネラルを残す為に誰よりも先にシャルドネを収穫したこと。逆にグレートヴィンテージと呼ばれる年の彼は手厳しく、話題は矛となって市場や顧客に向く。たとえば赤の2009年がグレートヴィンテージだと話題になったとき、アメリカの顧客が08年よりも先に予約を申し出た。彼はそれに腹を立て取引を停止してしまった。「ピノ・ノワールの真の魅力はギリギリの気候条件の中で見せる繊細さやエレガンスだ」と断言する彼には、07年や08年に目もくれずに「グレート」ばかりを追い求める姿が我慢ならなかったのだろう。名声を手にして以降も、彼の挑戦はとどまるところを知らない。格下げした村名ワインだけを使って「最高のブルゴーニュ　ルージュ」を造る。「シャンパーニュに匹敵するクレマン　ド　ブルゴーニュ」を造るために最適のシャルドネを捜し歩き、ノンドザージュでクレマンを造る。どちらも大赤字らしいが、ブルゴーニュの「基準」を上げるために、可能性に挑戦するために続けている。クセの強い男だが、そのワインには只々脱帽なのである。
