MEURSAULT ぶどう品種：シャルドネ 100% アルコール度数：13.5% 味わい：白ワイン 辛口Guy Bocard　/　ギィ・ボカール 進化を続ける、世界を魅了してきたムルソーの偉大な醸造家！ 名だたるムルソーのプルミエクリュを所有し、2022年よりフィリップ・パカレがコンサルトとして参画したことで更なる注目を集めている。 ギィ・ボカールはムルソー三大プルミエクリュと名高いシャルムやジュヌヴリエールをはじめとし、ブルゴーニュブランの区画まで含めると全体で5.6haを所有する。1920年代にギィの祖父にあたるシャルル・ボカールがブドウ畑をスタート。その後1959年にギィの父シャルルがワインの元詰めを始めた。 3代目にあたるギィは1976年から1983年にかけて、ムルソーにいくつかの区画を購入し、父が所有する畑も引き継ぎ、最初のワイナリーを設立。1987年には近代的なワイナリーを建設した。このワイナリーを、近代的なブドウ栽培方法の発展を望むフランス企業デリシュブールが、2018年に買収。デリシュブールはブドウの栽培をオーガニック栽培に転換させたのち、ブルゴーニュ屈指の著名醸造家フィリップ・パカレに支援を求めた。求めに応じたパカレは、2022年よりコンサルタントとして参画している。 現在ギィ・ボカールは、若いうちから豊かなアロマを放ち、美しい酸が特徴的で、顕著な複雑さを持つ、テロワールを反映した素晴らしいワインの生産を行っている。 パカレがコンサルタントに入って以降、全房で長時間のプレスを行い、自然酵母を使用し、最小限のピジャージュを行い、最小限のSO2を添加するという、パカレの長年の経験を活かした醸造方法が続々と導入されている。また、樽の選択や植樹のためのブドウ株選択に関しても助言をしており、現在ギィ・ボカールのワインはまったく新しいものへと生まれ変わっている。 栽培は、2019年からオーガニックに転換しており、2022年からオーガニック認証を所得している。樹液の流れをより尊重した剪定を行い、畝は草を生やして覆うことで、ブドウの品質を向上させる好循環を生み出している。収穫では、完全に成熟した状態のブドウを手作業で収穫し、粒が傷つかないようにするため25kgの箱にいれて運搬する。 醸造では、除梗はせず全房圧搾を行う。 ステンレスタンクで自然酵母により発酵をスタートし、アルコール発酵が終了する前に、樽に詰める。この一連の流れは、自然酵母による発酵が正しく行われているのを確認するためであり、また発酵の段階で酸化をある程度防止するためでもある。その後マロラクティック発酵を行い12ヶ月熟成した後、澱引き、無濾過で瓶詰めを行う。瓶詰め前には、必要に応じてわずかなSO2を添加する。 長きに渡り家族経営で大事に守られてきた銘醸畑に加え、デリシュブールがその潤沢な資金力を惜しみなく投資し、ブルゴーニュ屈指の著名醸造家であるフィリップ・パカレが自分の経験を最大限に発揮している。三拍子揃ったギィ・ボカールが、今後入手困難な注目ワイナリーとなっていくことは間違いないだろう。
