日本代购-ドメーヌ一押し自社畑「ヴォーヌ・ロマネ オー・シャン・ペルドリ」 ヴォーヌ・ロマネらしい綺麗な花の香りが特徴的で、村名とは思えないクオリティの高さ！ アンリ・オーディフレッドはもともとDRC社の12人の正社員のひとりで、ロマネ・コンティとラ・ターシュの栽培を担当しながら(別の人がリシュブールとロマネ・サンヴィヴァンを、さらに別の人がグラン・エシェゾーなどそれ以外を担当。これが正しい情報です)、時折醸造にも携わっていたエースでした。2003年、ヴォーヌ・ロマネ村の入口付近にある実家のドメーヌを継承し、以降数年間、2足の草鞋で休日も休まず働いていました。 そして2007年2月、14年間勤めたDRC社を退社し、いよいよ自身のワイン造りに没頭することになりました。特に栽培においては、DRCの栽培ノウハウを存分に活用しており(なにしろ本人ですので)、ロマネ・コンティばりの凄まじい手入れがなされた彼の畑を見ると、思わず笑ってしまうほどです。 「オー・シャン・ペルドリ」は、小道を挟んで「ラ・ターシュ」の斜面上側に接する畑です。ヴィラージュ・クラスの区画ながら、ラ・ターシュとグランド・リュの上部斜面という好立地条件は、クォリティの高さをうかがうに十分である。0.31ha。平均樹齢約60年のVV。約18ヶ月間の樽熟成。 ■テクニカル情報■ 栽培：リュット・レゾネ栽培。殺虫剤は一切使用しない。 醸造：除梗100%。天然酵母のみで発酵。無清澄、ノンフィルターでビン詰め。 Domaine Audiffred Vosne Romanee Aux Champs Perdrix ドメーヌ・オーディフレッド ヴォーヌ・ロマネ オー・シャン・ペルドリ 生産地：フランス ブルゴーニュ コート・ド・ニュイ ヴォーヌ・ロマネ 原産地呼称：AOC. VOSNE ROMANEE ぶどう品種：ピノ・ノワール 100% アルコール度数：13.5% 味わい：赤ワイン 辛口 ミディアムボディ 手前右側がロマネコンティ、左側がグランドリュ、小道が左奥がシャンペルドリ ■2016年オーディフレッド氏ウメムラ来店時の感想です■ 世界最高峰のワイン、ロマネコンティとラ・ターシュの栽培を任され、醸造にも携わっていた、DRCの元エース、アンリ・オーディフレッド。14歳からワイン学校に通い、ワイン造りに熱中し過ぎて、45年間一度も飛行機に乗ったことがなかった彼がはじめての海外プロモーション! 実は、今から4年ほど前に、ドメーヌ・オーディフレッドを訪ねたことがあるのです。その当時はアンリが不在で、お父様がお出迎えしてくれて、樽からすべてのワインを試飲させていただき、それ以来このドメーヌの大ファン!私にとっても念願のファーストコンタクトでした! 数年間は、DRCとドメーヌ・オーディフレッドの二足の草鞋で休日も休まず働いてきました。お父様が1970年に設立した実家のドメーヌ「オーディフレッド」でのワイン造りにまい進するため、14年間勤めたDRCを退社。ちなみにお父様のベルナール・オーディフレッド氏はあの「ジャック・フレデリック・ミュニエ」で栽培長を25年間務めていたとか凄腕の持ち主。親子共に素晴らしい経験の持ち主なのです。 醸造に関して、今回おうかがいしたことは、DRCは原則的には全房発酵ですが、オーディフレッドは除梗100%。その理由の一つとして、青臭さを残さず、ピュアな果実味を追求するためだそうです。その他、醸造では抽出が強くなるピジャージュはせず、ルモンタージュのみ行います。使用樽は、DRC社と同じ「フランソワ・フレール社」の樽を使用。醸造に関しては、余分な人為的介入を極力避け、出来る限り自然の力で育った葡萄のパワーが生かされることによって、これほどピュアで葡萄の旨味がストレートに感じられるのでしょう。 驚くべきことに畑の作業から醸造まですべて、お一人でこなされているそうです。気の遠くなるような毎日の畑での作業、繁忙期である5月から7月にかけては2人雇われるそうですが、それ以外はすべてお一人で朝は5時30分には畑に出向くそうです。夜は、息子さん二人の夕食の準備。どれだけできたパパ!今回の会で、ブルゴーニュ・ルージュから年産300本のヴォーヌ・ロマネ・オー・レニョまで開けたましたが、人柄がが滲み出る、滋味溢れたやさしく、透明感溢れるワインたち。オー・レニョは未知の世界でしたが、やはり別次元です。 また看板畑であるシャン・ペルドリは、やはりテロワールの恩恵、造り手の並々ならぬ努力の賜物によって村名とは思えないヴォーヌ・ロマネの見事な世界観を見せてくれました。2013年は今香り・味わいとも全開に開いています。先月日本に到着したばかりの2014年はもう少し休息が必要ですが、もし早めに飲まれるのであれば、最低でも2時間前の抜栓をお勧めいたします。また、残り僅かになっている2012年は、今現在眠り状態に入ってしまったようです。昨年飲んだときは最高に開いていたのですが、ワインって生き物ですね。 もはやとんでもない価格になってしまったロマネ・コンティ1本売るなら、オーディフレッドのヴォーヌ・ロマネ・シャン・ペルドリ100本ご案内して、100人の人の笑顔が見たい。本当に心からそう思いました。 会の最後には、2年前にお亡くなりになられたお父様のことを思い出し、感極まったアンリ・オーディフレッド。「お父さんのおかげで今ここに立てている」と仰っていました。生産者、輸入元の想いをしっかりとお客様にお伝えしていきたいと思いました。2016.08.12Henri Audiffred / オーディフレッド アンリ・オーディフレッドはもともとDRC社の12人の正社員のひとりで、ロマネ・コンティとラ・ターシュの栽培を担当しながら（別の人がリシュブールとロマネ・サンヴィヴァンを、さらに別の人がグラン・エシェゾーなどそれ以外を担当。これが正しい情報です）、時折醸造にも携わっていたエースでした。 2003年、ヴォーヌ・ロマネ村の入口付近にある実家のドメーヌを継承し、以降数年間、2足の草鞋で休日も休まず働いていました。 そして2007年2月、14年間勤めたDRC社を退社し、いよいよ自身のワイン造りに没頭することになりました。特に栽培においては、DRCの栽培ノウハウを存分に活用しており（なにしろ本人ですので）、ロマネ・コンティばりの凄まじい手入れがなされた彼の畑を見ると、思わず笑ってしまうほどです。「畑仕事では、どんな小さな点でも妥協しません。それが、それぞれのテロワールの特性をくっきりとワインに表すことにつながると信じています」。醸造は「できるだけ手をかけずナチュラルに」。 オーディフレッドのワインは総じて淡い色合いで、ピュアで繊細な果実味が口の中に優しく広がります。それでいて、大地の滋養を感じるたっぷりとしたエキスのうまみは圧巻です。 ■2023年10月7日オーディフレッドを訪問しました！■
