日本代购-詳細と【送料無料にする方法】はこちら お得なセットに同梱で送料無料に！【英字】DOMAINE SIMON BIZE SAVIGNY LES BEANE ROUGE PREMIER CRU AUX GRAND LIARDSキリっと冷やして夏を飲もう！冷やして香る夏の贅沢世界一周ワインの旅 6ヶ国飲み比べ赤6本セット！世界一周ワインの旅 6ヶ国飲み比べ白6本セット！Instagramフォローでクーポンプレゼントギフトラッピングはこちらから酸とミネラルを基調としたエレガントなワインへのこだわり シモン ビーズ Simon BIZE サヴィニー・レ・ボーヌという比較的マイナーなアペラシオンにあって、驚くほど緻密で繊細なワインを生み出すドメーヌ・シモン・ビーズ。ドメーヌの創設は1880年。初代シモン・ビーズがわずかばかりのブドウ畑を耕作して始めた。1950年に孫の3代目シモンがドメーヌを継承すると、ブドウ栽培のみならず、醸造家としての才能にも恵まれた彼は、戦後の経済復興もままならぬ中でドメーヌ元詰めを決意。ドメーヌ・シモン・ビーズのワインは高く評価され、レストランのシェフやソムリエ、さらにワイン愛好家の間で広まっていったという。 そして1972年にドメーヌを引き継いだのが、3代目シモンの息子、パトリックである。彼はドメーヌの名声をさらに高めると同時に、ブドウ畑を大きく拡張。1995年にラトリシエール・シャンベルタン、1997年にコルトン・シャルルマーニュと、赤白ふたつのグラン・クリュを手に入れることに成功し、ドメーヌの総面積は22ヘクタールに達した。 そして1998年、パトリックは日本人女性の千砂さんと結婚。長男ユーゴ、長女ナスカというふたりの子どもにも恵まれたものの、2013年10月、61歳の若さで他界した。以後、ドメーヌの舵取りは千砂さんと、パトリックの妹で、ヴォーヌ・ロマネのドメーヌ・ジャン・グリヴォに嫁いだマリエルに委ねられている。 ドメーヌでは2008年から、千砂さんの進言によりビオディナミ農法を採用。子育ての過程でシュタイナー教育に興味をもった千砂さんが、シュタイナーの理論が農業とも結びついていることを知り、アンヌ・クロード・ルフレーヴによるビオディナミの勉強会に出席したのがきっかけ。パトリックに相談すると、「セルパンティエールなら試してもいい」と言われたという。当時、セルパンティエールの畑はウィルスに冒されており、引き抜くしかなかったが、ビオディナミを実践すると畑の様子が徐々に変わってきた。ワインの質は始めてすぐに変わったという。「2008年からワインにヴァーティカルなラインが出て、緊張感のあるワインになった」と千砂さん。 ワイン造りは今も昔も変わらない。白ワインは収穫後、ブドウをただちに圧搾し、12時間のデブルバージュ。小樽に移して発酵。クリマに応じて6〜12ヶ月の樽熟成を行う。新樽率は15〜30％と比較的少なめで、古い樽は5年ものまで使用する。バトナージュは機械的には行わず、各樽の状態を見て判断するという。 赤ワインの醸造も古典的。基本は100%全房である。近年の例外は成熟の難しい区画のブドウを除梗した2007年と、大雨や雹に祟られ完全除梗を決断した2013年。発酵には木桶を使い、柔らかな抽出のためピジャージュは足。その後、樽に移すが新樽率はきわめて低く、まったく新樽を使わないキュヴェも多い。収穫翌年の1月から3月にかけてすべてのワインを瓶詰めする。 シモン・ビーズのワインの特徴は”端正”のひと言。白はきれいな酸味が基調でミネラルに富み、赤はしなやかながらストラクチャーはしっかりしてる。いわゆる過剰なところがないのがこのドメーヌの特徴であり、料理と合わせるとじつにおいしく、その値ごろ感からもレストラン向けのワインといえるだろう。 2014年は買いブドウながら、千砂さんが欲しい欲しいと言い続けてきたコルトンの赤（リューディはルナルド）をとうとう醸造。「天国のパトリックからプレゼントが届いた」と千砂さんは語る。また息子のユーゴは現在、ボーヌのリセ・ヴィティコールに通い、頼もしく成長している。パトリック亡き後のドメーヌも安泰である。 サヴィニー・レ・ボーヌを拠点に1880年からワイン作りをする実力派、 　　　　　　 　　 　　　　　シモン・ビーズ　 数々の秀逸なワインを世に送り出してきた偉大な当主「 パトリック・ビーズ 」氏が、 2013年10月、自動車を運転中に心筋梗塞に襲われ急逝したとのニュースは、 ワイン業界に激震が走りました。 パトリック氏亡き後、奥様であり日本人の千砂さんが、長男ユーゴ君と長女ナスカちゃん のお子さんと共に大奮闘し、ますます磨きがかかっています。 リュット・レゾネ(減農薬農法)を実践していますが、実際には除草剤や殺虫剤は 一切使用せずに栽培されています。 最初に仕込む大樽（木製）では、ブドウを房ごと足踏みするなど昔ながらの方法を 続けています。 2008年からは、一部でビオディナミ農法を採用し、評価、人気ともに高いレベルで 保ち続けています。 人気ワイン評価誌「 リアルワインガイド 」でも、たびたび登場し、 「 リアルワインガイド　50号 」では、 　　近年のシモン・ビーズの品質向上とスタイルの良さには改めて感心する。 　　元々エレガント系だったスタイルは、そのエレガンスを保ちながら求心力のある液体 　　となり続け、これ以上の発展の余地はないと思っていたが、 　　千砂さん曰く「 14年をお楽しみに。これが新たなシモン・ビーズという方向性を 　　確立したから 」と。う〜む、やはりさすがだ。 と、脱帽のコメント！ ご主人の急逝に加えて雹にも襲われ壊滅的な危機に遭遇した、2013年を切り抜けた シモン・ビーズ。 ヴェリタスとしても、孤軍奮闘する千砂さんを応援せずにはいられません。 世界的評論家パーカー氏も、その堅実なワイン造りに、 　　　 　　　　　　　『 驚くほど熟成能力のある、古典的なワイン 』 と、★★★★4つ星評価をする実力は今も健在！ クラシックな仕上がりで流行の色が濃く、タップリと甘い果実味があるブルゴーニュとは、 一味違う昔ながらの質朴な良さを味合わせてくれる、深さと滋味あふれる逸品です。 いずれも、即完売必至の超人気アイテムです。 迷わず速効クリックでお願いいたします！
