日本代购-Etoileのブドウを使用し、Vincent Dancerと同じChassagne Montrachetのワイナリーで醸造。 ライム、ベルベーヌ、フレッシュなハーブ、仄かなチョークのニュアンスが感じられる。口中を潤すような爽快感と良質なテクスチャーを持つ。フルーティーでハーブのアクセントがあり、バランスの取れた味わい。長く持続的なフィニッシュにはライムとベルベーヌの香りが残り、鮮やかな後味が楽しめる。ブドウ品種：サヴァニャン100%醸造・熟成・大型の古樽で発酵が完了すると、冬まで15ヶ月間澱引きせずに置かれる。瓶詰め前に安定させるため瓶詰め前の15日間にステンレスタンクで澱引きされて静置される。 ウイヤージュあり、フロール無しTheo Dancer オーナー THEO DANCER 醸造責任者 THEO DANCER所有畑面積 2.5 ha歴史：テオは自らの2021年にネゴシアンを設立し、ジュラ、ローヌ、サヴォワにある友人のエステートからブドウを調達している。彼のネゴシアンワインは、ドメーヌのスタイルを踏襲し、シャサーニュのセラーで醸造されている。 ヴァンサンの息子であるテオ・ダンセールは、若くから父親のドメーヌで多くの時間を過ごし、2021年からはその指揮を執るようになった。彼は父から得た知識と経験をもとに、自身のプロジェクトをスタート。伝統的なブルゴーニュ品種だけでなく、サヴァニャンやグルナッシュを取り入れつつ、アリゴテやガメイといったクラシックな品種の栽培にも意欲的である。今後7年間でわずか4種類のキュヴェを手掛ける計画で、これらはテオが父と共に楽しむお気に入りのブドウだ。どのラインナップにもテオの精密さが感じられ、才能あるテオの圧倒的なエネルギーと自信が溢れている。 ネゴシアンを主体とするこのプロジェクトでは、テオは信頼できるヴィンヤードのオーナーたちと長年の関係を活かし、良質なブドウ畑に注力。ブドウが細心の注意を払って扱われ、介入を最小限に抑えるアプローチが基本理念となっている。畑でのフォーカスと各品種の収穫に対する直接的な監督により、テオは最高品質のブドウをセラーに取り入れ、さまざまな創造的なワイン製造技術を駆使することが可能となっている。 ブルゴーニュのトップ白ワイン生産者の一人であるヴィンセント・ダンサーの息子、テオ・ダンサーは、ブルゴーニュのドメーヌで父の仕事を継承しつつ、自身の興味を持つ多様な品種に挑戦している。テオはアリゴテやガメイといったブルゴーニュのルーツを守る品種も引き続き生産しながら、アルザス、サヴォワ、ジュラ、そして現在ではプロヴァンスの優れたヴィンヤードからもブドウを調達し、自らの名を冠したワインを生み出している。ブルゴーニュのドメーヌで長年にわたり評価されてきた緊張感ある品質は、今や才能溢れる若い世代の嗜好とスタイルを通して磨かれている。 フィロソフィー：セラーでは、テオの目標はシンプルにし、本能を信じること。天然酵母、自然なマロラクティック発酵、バトナージュなし、清澄や濾過なし。各ワインに一貫性を持たせながらも、ラックの長さ、ガラス製のグローブやアンフォラといった発酵容器の種類、中古から新品までのオーク樽の使用範囲に変化を持たせている。ローヌからボジョレー、コート・ドールに至るまでの品種での実験的な自由を享受し、テオはブルゴーニュの繊細さをこれらのキュヴェに巧みに表現している。ダイナミックなプロジェクトとして、ドメーヌ・テオ・ダンサーには無限の可能性が広がっている。 栽培：テオは健全な農法に重点を置き、適切な人々やブドウ畑からブドウを調達し、ブドウ畑での努力を信頼している。すべての畑がまだ有機認証を受けているわけではないが、それぞれの畑は最高の注意を払い、最も「ハンズオフ」のアプローチで扱われている。ブドウは圧搾後、すぐに樽に移される。早摘みにより熟しすぎてないブドウを収穫する。（8月中～下旬頃） 醸造：テオは父との経験と直感を信じて、各ワインの最高の表現を目指している。セラーではミニマリスト的なアプローチを維持。天然酵母、酵素や酸の添加なし、自然なマロラクティック発酵、バトナージュなし、清澄や濾過なし。各ワインに同じアプローチが適用されている一方で、ラックの期間、発酵容器などには若干の変化がある。以下で各ワインの詳細に触れていく。 発酵が完了すると、冬までラックせずに置かれる。その後、瓶詰め前に安定させるため、ステンレスタンクに移される。
