日本代购-フランス ブルゴーニュ モンラッシェ モンラシュ モンラッシュ 白ワイン 白 ワイン ギフト プレゼント 辛口 広域アペラシオン ジェネリックコート・ド・ボーヌ地区南部、秀逸な白ワインの産地として名高いシャサーニュ＝モンラッシェ。その村の中心部に位置するドメーヌは、19世紀半ばに駅馬車の中継地のレストランとして建てられ、以後現在にいたるまで一貫して職場・住居としてモレイ家が所有しています。 1920年、フェルナンド・モレが設立。ドメーヌ名マルク・モレは彼の息子の名。 マルク・モレには男子の相続人がなく、娘婿のベルナール・モラールが1976年にドメーヌに参加することになります。マルクの娘マリー＝ジョーはボーヌの醸造学校を卒業後、試験所に勤務していたが82年に退職し、現在販売を担当。 マルク、マリー＝ジョー、ベルナール・モラールの親子3人のワイン造りはマルクのリタイアの90年まで続き、現在の当主は3代目になるモラール夫妻。元詰は1930年代から。現在の所有畑は9ha で年産は約5万本。約60%が輸出。 現在の当主ベルナール氏は、義父マルクの仕事振りを見ながら少しづつ仕事を覚え、義父がしていた通りのワイン造りの伝統を守っています。 変わったのはプレス機などの周辺機器がごく僅かですが最新の情報に無関心ということではなく、産地の異なる樽材を試したり、シャサーニュ村有志の有機栽培の勉強会に参加するなど、品質の向上に繋がる技術は積極的に取り入れようとしています。 低農薬栽培を実施し、雨の後など必要に応じて少量の農薬を使用する。 化学肥料は使わずシャサーニュの有志の共同で有機肥料を作っています。 平均樹齢30年の株からシャルドネは50-55hl/ha、ピノは40-45hl/haの収穫量。 全て手摘みで収穫。白は空圧式プレス機で圧搾後、フレッシュ感を残すためタンク50％、樽50％の割合で発酵。温度調節装置の付いたステンレスタンクで発酵、温度は18〜20℃、最高でも22℃を超えないようにしています。 樽での発酵は容器が小さいので温度管理の必要がないとのこと。 酵母の活動を活発にするため発酵途中からバトナージュを開始し、マロラクティック発酵（以下MLF）終了まで継続。但し、途中のテイスティングの結果次第ではMLF終了前にやめることも。 マストを樽に入れてからアッサンブラージュまで1年間、アッサンブラージュの際に唯一の澱引きを行います。清澄はせず、プレート型ろ過機でごく軽くフィルターをかけられて瓶詰め。 マルク・モレでは強い樽香はテロワールを忠実に反映しないと考え、新樽は25％〜30％に押さえ、焼きはミディアムに仕上げています。樽材はいろいろ試した結果、アリエ県産の木材が大部分を占めています。 ※本文中の写真はイメージです。 ※商品画像はイメージです。 入荷時によりラベル、デザイン、ヴィンテージ、などが実物と異なる場合がございます。 ※別店舗と並行して販売いたしております。 在庫の管理には注意を払っておりますが、別店舗との売り違いにより売り切れの場合がございます。 何卒ご了承の上、ご購入頂きますようお願い申し上げます。 ※ブレンド比率や他詳細データなどは掲載時点のデータです。 購入時点でのデータと異なる場合もございます。
