日本代购-毎回高品質なコニャックをリリースし、即完売が続いているBAR DORASさんのPBボトル。   現地の生産者と強固な信頼関係を築き、これまでブドウの手摘み収穫のお手伝いや、生まれたばかりの赤子の洗礼式に立ち会うなど、各家と国境を越えたファミリーのお付き合いを続けてきた中森氏。   今回は献花を携えての訪問を行う中でも歓迎を受け、前回に比して更に増えた提供サンプルの中から生産者も驚くような間違いのない原酒をセレクトされています。   今回も少量入荷となっておりますので、コニャックの真骨頂、アッサンブラ−ジュの妙をお愉しみ下さい。       【テイスティングコメント】   ベルトラン家が栽培から蒸留、熟成を経て、1992年と1994年の2樽をバッテッドした“ダブル・バレル・セレクション”。分かり易くウイスキーに例えればブレンデッド・ウイスキーとバッテッド・モルト・ウイスキーの違いのよう、ダブル・バレル・セレクションは2つだけの原酒をバッテッドしたコニャックです。長き伝統を大切にしているからこそ、若い世代によりスタイリッシュな最先端も取り入れることが出来る温故知新を感じる造り手のスタイルが味わいに表れています。   訪問時に外壁が黒くなるほどしっとりした湿度の高い熟成庫に入った瞬間を思い出す、蒸発したコニャックの成分により生まれるキノコの香りがコニャックにも表れていて、フィグ、クローブやナツメグのスパイス、オーク、レザー、クルミ、ダークチョコレート、バニラ、コーヒー豆、紅茶葉やパイプの葉の香りが重なり合います。   シングルカスクのピュアさに比べ、2つが合わさることで生まれる複雑さや厚みが香り同様味わいにも乗り、余韻には丁寧に造られたブドウ本来の味わいがしっかりと残ります。多くを混ぜるとバランスが取れる反面それぞれの個性が隠れる中で、2つだけで造る難しさをプラスに変えた消去法の美学が表れる高い技術です。   コニャックは水と相性が悪くボトリング直前に加水するとエグ味が出てしまう点に関しても、2つの樽を合わせた後2019年に蒸留水で加水してボトリングまでの5年間でコニャックと水の分子がゆっくりと一体化されてエグ味なく纏まっています。   1＋1が3にも4にもなるアッサンブラージュの伝統芸術は秋から冬へ向かう気候を連想するコニャックで、夜長に一飲みごとに深まる味わいに合うシガーと共にお愉しみもおすすめします。   Commented & tasted by Yasutaka NAKAMORI
